How to cook a perfect standing rib roast was the question I was asking for our quarantine Christmas Eve. I decided on the easiest recipe, and it did not disappoint.
Go to your favorite butcher and ask for a roast big enough to feed however many people you will be serving. I went to Whole Foods in Santa Fe, and the many who helped me was great.

At What Temperature Should I Cook My Standing Rib Roast?
Preheat the oven to 550 degrees.
While it’s heating prepare your meat with seasoning. We prefer course ground pepper and Sea Salt. Let it sit out at room temperature for a few hours. You don’t want to put a cold piece of beef in a hot oven.

How To Cook A Standing Rib Roast
Place meat in a shallow roasting pan fat side up.
Roast at 550°F at 5 minutes per pound for RARE, or 6 minutes per pound for MEDIUM and 7 minutes per pound for WELL DONE.
Turn off oven at the end of cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.
At the end of the 2 hours, remove meat from oven to slice; it comes out perfect everytime.

No, leave it uncovered the entire time. Cook it in a shallow pan uncovered.

Our kitchen was filled with smoke. Cooking the roast at such a high temperature seals the meat by searing the outside. But for those of us who live in a climate where we can’t always use the grill, this is perfect.
