One crock pot pork loin; feed your family for a week. Sounds like a dream doesn’t it. Believe me, it’s not a dream. It can easily be your reality! Here’s some of my favorite meals to make with a chopped pork loin.
First, cook the pork loin. I do this by placing my pork loin in a crock pot seasoned with salt and pepper or any favorite seasonings. I have learned to add 1 whole onion. The onion cooks down so much that you hardly know its there, and onion acts as a natural meat tenderizer. Cook on low for at least 8 hours or overnight.

Meal #1- Shredded Pork Bar-B-Q Sandwiches

Warm enough pork for however many sandwiches you need to make on the stove with bar-b-q sauce. I toasted sourdough bread for our sandwiches. It was delicious.
Meal #2- Shredded Pork Sour Cream Enchiladas.
Preheat oven to 350 degrees.
Ingredients
2-3 Cups shredded pork
2 Cups Sour Cream
1-2 Cups New Mexico Green Chiles (or one can of green enchilada sauce if you can’t find green chiles)
1/2 onion
1 bell pepper
Corn or Flour Tortillas










Meal #3- Shredded Pork Spaghetti
This is just an old Chicken Spaghetti recipe, but Dr. T doesn’t really like to eat chicken so I’ve changed all my chicken casserole recipes to now use shredded pork.
Preheat oven to 350 degrees.
Ingredients
1/2 – 1 whole onion diced
1 bell pepper diced
2-3 celery stalks diced
Cream of Mushroom Soup- 1 can
3 cups Sour Cream
Rotel Tomatoes- 1 can
1 box spaghetti pasta cooked and drained



Meal #4 Shredded Pork Taco

The quickest and easiest meal by far is the shredded pork taco. Heat up shredded pork (sauté with onion and pepper if you wish). I also add a bit of chicken fajita seasoning. Add pork mixture and cheddar cheese inside a taco. It’s what’s for lunch!
Dr. T took a pork taco for his lunch every day. Yes, he really does eat a jalapeno with his meals.
There is nothing fancy about any of these meals, but it sure is nice to have such a variety without having to think of what meat I need to cook!
